Pumpkin Butter – Oh My Word!

So I’ve been seeing pumpkin butter all over the blog world for the past month or so and although I was weary at first, I finally decided that it was time. I had an open can of pumpkin in the fridge so the timing was perfect!




Why have I not tried this yet??

I used Angela’s recipe pretty much to a tee although I used brown sugar and maybe juice from only 1/4 of a lemon.

My house smelled just like a little piece of heaven. Yum!!! 😉

The batch made enough to fill these 3 small jars – 1 for my mom and 2 for me! 😉  …although my co-workers have been dabbling into my mom’s jar this morning. They all love it!…

Now making the pumpkin butter last night was all fine and dandy however I was more excited for this morning to try it in my oatmeal.

Oh baby!

I almost ran downstairs after my shower to star making my oatmeal bowl.

I swear this stuff smelled like pumpin pie when I popped open the jar! *drool*

In the mix for today’s bowl:

  • 1/2 C rolled oats
  • 1 tsp unsweetened unsalted pb
  • 2 tsp unsweetened coconut
  • 1 tsp chia seeds
  • 1/2 banana
  • 2.. or maybe 3… or 4 heaping spoonfuls of pumpkin butter 😉
  • skim milk


THAT was a breakfast!

Can’t wait to eat more!
